Avo and mint smoothie
Serves 1 (about 500 ml)

Cucumber and mint add a refreshing flavour to this healthy, thick smoothie with avocado and almonds. The avocado is so creamy that no dairy is needed, making this a dairy-free and vegan meal.


60 ml (¼ cup) boiling water
20 raw almonds
10 cm piece of cucumber, cubed
1 celery stalk, sliced
2 large handfuls baby spinach or kale, shredded
1 small ripe GEM® avocado, cubed
10 fresh mint leaves
5 ml (1 tsp) lemon juice or more to taste
black pepper to taste


1. Pour boiling water over the almonds and allow to stand for 10 minutes.
2. Place almonds and water in a blender and blend until smooth. Add the rest of the ingredients and blend until smooth. Add a pinch of pepper and stir through.
3. Serve immediately as a snack or light meal.


1. Substitute half of the mint with fresh coriander, if preferred.
