Homemade guacamole
Serves 4 | Makes 250ml

This easy recipe is a treat as a snack and a delight for party guests.

Ingredients

2 ripe avocados, 1 mashed and 1 cubed or 1 x 200g Westfalia Guacamole
15ml (1 tbsp) freshly squeezed lemon juice
10ml (2 tsp) Westfalia Plain Avocado Oil
2 spring onions, finely chopped
1 small ripe tomato, diced
1 small chilli, chopped (seeded for a milder flavour)
45ml (3 tbsp) chopped fresh coriander leaves
salt and pepper

Method

1. Gently stir all the ingredients together and season to taste.
2. Enjoy on a slice of toast, fresh bread or with savoury biscuits. Try it with a fried egg on toast or omelette for a breakfast idea. You could also serve it as part of a meal, with Mexican dishes or as a dip with crudités. The guacamole makes a delicious sauce for a burger or a dip for meatballs.

Tips

1. Substitute spring onions with 1 small red or white onion, finely chopped. If you prefer a milder onion flavour, pour boiling water over the onions. Allow to stand for 5 minutes and drain well before using.
2. Westfalia’s Plain Avocado Oil can be substituted with the Lemon or Garlic-flavoured Avocado Oil, if preferred.
