Thai guacamole
Serves 4 | Makes 250ml guacamole

Coconut milk is a key ingredient in Thai food. The subtle flavour of the coconut blends very well with the avocado.


1 x 200g Westfalia Plain Guacamole
60ml (¼ cup) coconut milk
60ml (¼ cup) chopped fresh coriander leaves
salt and pepper
handful fresh coriander leaves to garnish


1. Mix all the ingredients together and season to taste. Garnish with coriander.
2. Serve as a snack with savoury biscuits or fresh veggies or crudités. Serve on oven-roasted sweet potato or with chicken or fish.
